  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, minced
  • 1 tablespoon fresh rosemary, minced
  • 1 tablespoon olive oil, for cooking
  • 2 tablespoons butter, for cooking


Instructions

  1. Season. Generously season both sides of your lamb chops with salt and pepper to enhance their natural flavor.
  2. Prepare the garlic herb marinade. In a small bowl, combine the olive oil, minced garlic, fresh parsley, and rosemary. Using a pastry brush, coat both sides of each lamb chop with the marinade. Discard any leftover marinade. Allow the lamb chops to rest at room temperature for 30 minutes to let the flavors develop and the meat tenderize slightly.
  3. Cook. Heat a large cast-iron skillet or frying pan over medium-high heat. Add the olive oil and swirl to coat the skillet. Once the oil begins to smoke lightly, add the lamb chops. Cook for 3-4 minutes until the bottom is browned. Add the butter to the skillet and flip the chops. Continue cooking for another 4-5 minutes, or until the internal temperature reaches 125°F for medium-rare or 135°F for medium, using a meat thermometer for accuracy.
  4. Rest. Remove the chops from the skillet and let them rest on a plate or cutting board for at least 5 minutes. This resting period allows the juices to redistribute, ensuring a juicy and tender chop.
