  • 1 (4-pound) whole chicken, at room temperature, giblets and neck removed from the cavity
  • 1/4 cup unsalted butter, melted
  • 3 tablespoons olive oil
  • 1/4 cup white wine (optional)
  • 1 lemon, halved
  • 1 pinch of salt, to taste
  • 1 pinch of pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 4 cloves garlic, minced
  • 1 head of garlic, roughly peeled and cut in half horizontally
  • 3 fresh rosemary sprigs

Instructions

  1. Preheat oven and prepare the chicken: Preheat the oven to 430°F (220°C). Line a baking tray with foil or grease a roasting pan. Remove excess fat and feathers from the chicken cavity, pat dry with paper towels.
  2. Season the chicken: Combine olive oil, melted butter, wine, lemon juice, salt, pepper, and parsley. Rub minced garlic over the chicken, including under the skin.
  3. Stuff the chicken: Place the garlic head, rosemary sprigs, and lemon half inside the cavity. Tie the legs together with kitchen string.
  4. Roast the chicken: Roast breast-side up for 1 hour and 15-20 minutes, basting halfway through. Broil for 2-3 minutes until golden.
  5. Rest and serve: Cover the chicken with foil, let it rest for 10 minutes, then serve with pan juices and lemon wedges.
