Instructions
- Prepare the Oil – Pour vegetable oil into a deep, heavy-bottomed pot to a depth of 2 inches. Heat the oil over medium heat to 350°F (175°C), using a thermometer for accuracy.
- Mix Dry Ingredients – In a large bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and salt until well combined.
- Combine Wet Ingredients – In a separate bowl, whisk together the milk, granulated sugar, eggs, and pure vanilla extract until smooth.
- Make the Batter – Gradually pour the wet mixture into the dry ingredients, stirring just until combined. Do not overmix; a few lumps are okay.
- Fry the Bites – Using a small scoop or spoon, carefully drop tablespoon-sized portions of batter into the hot oil. Fry in batches, turning occasionally, for 2-3 minutes or until golden brown and cooked through.
- Drain and Serve – Remove the funnel cake bites with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil. Dust with powdered sugar, if desired, and serve warm.
