  2. Mix Dry Ingredients – In a large bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and salt until well combined.
  3. Combine Wet Ingredients – In a separate bowl, whisk together the milk, granulated sugar, eggs, and pure vanilla extract until smooth.
  4. Make the Batter – Gradually pour the wet mixture into the dry ingredients, stirring just until combined. Do not overmix; a few lumps are okay.
  5. Fry the Bites – Using a small scoop or spoon, carefully drop tablespoon-sized portions of batter into the hot oil. Fry in batches, turning occasionally, for 2-3 minutes or until golden brown and cooked through.
  6. Drain and Serve – Remove the funnel cake bites with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil. Dust with powdered sugar, if desired, and serve warm.
