Description

This refreshing Frozen Yogurt Bark is a quick and healthy treat made with creamy Greek yogurt, naturally sweetened with maple syrup or honey, and topped with vibrant berries and coconut flakes. It’s perfect for a light snack or dessert, and great for a make-ahead option for busy days.

Ingredients

Units Scale

For the Yogurt Base

  • 1 1/2 cups plain full-fat Greek yogurt
  • 2 Tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract

For the Toppings

  • 1/31/2 cup fresh strawberries, sliced
  • 1/31/2 cup fresh blueberries
  • 23 Tablespoons unsweetened coconut flakes

Instructions

  1. Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, maple syrup (or honey), and vanilla extract. Mix well until smooth and creamy.
  2. Spread on Baking Sheet: Line a baking sheet with parchment paper. Pour the yogurt mixture onto the sheet and use a spatula to spread it evenly to about 1/4-inch thickness.
  3. Add Toppings: Distribute the sliced strawberries, blueberries, and coconut flakes evenly over the top of the yogurt layer. Press the toppings gently into the yogurt so they stick.
  4. Freeze: Place the baking sheet in the freezer for at least 3 hours, or until the yogurt is fully set and firm.
  5. Break and Serve: Once frozen, remove the bark from the freezer and let it sit at room temperature for a couple of minutes. Break it into pieces and serve immediately. Store leftovers in an airtight container in the freezer.

Notes

  • Use parchment paper to prevent sticking and ensure easy removal from the baking sheet.
  • Customize the toppings with other fruits, nuts, or seeds as desired.
  • For a dairy-free version, use plant-based yogurt.
  • Keep stored in the freezer until ready to eat, as it melts quickly at room temperature.
