For the Yogurt Base
- 1 1/2 cups plain full-fat Greek yogurt
- 2 Tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
For the Toppings
- 1/3 – 1/2 cup fresh strawberries, sliced
- 1/3 – 1/2 cup fresh blueberries
- 2–3 Tablespoons unsweetened coconut flakes
Instructions
- Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, maple syrup (or honey), and vanilla extract. Mix well until smooth and creamy.
- Spread on Baking Sheet: Line a baking sheet with parchment paper. Pour the yogurt mixture onto the sheet and use a spatula to spread it evenly to about 1/4-inch thickness.
- Add Toppings: Distribute the sliced strawberries, blueberries, and coconut flakes evenly over the top of the yogurt layer. Press the toppings gently into the yogurt so they stick.
- Freeze: Place the baking sheet in the freezer for at least 3 hours, or until the yogurt is fully set and firm.
- Break and Serve: Once frozen, remove the bark from the freezer and let it sit at room temperature for a couple of minutes. Break it into pieces and serve immediately. Store leftovers in an airtight container in the freezer.

- Use parchment paper to prevent sticking and ensure easy removal from the baking sheet.
- Customize the toppings with other fruits, nuts, or seeds as desired.
- For a dairy-free version, use plant-based yogurt.
