For the Potato Balls:
- 2 green onions, diced
- 3 cups leftover mashed potatoes
- 1 1/2 cups shredded colby jack cheese
- 1 1/2 jalapeno, diced
- 1 cup crumbled cooked bacon
- Salt and pepper to taste
- 2 large eggs
- 1 1/2 cups panko bread crumbs
- 2–3 cups neutral oil
Instructions
- Prepare the Potato Mixture: In a bowl, mix mashed potatoes with green onions, cheese, jalapeno, bacon, salt, and pepper.
- Coat the Balls: Whisk eggs in a bowl and place bread crumbs in a separate bowl. Shape potato mixture into balls, coat in eggs, then in bread crumbs.
- Fry the Potato Balls: Heat oil in a skillet. Fry the balls until golden brown on all sides, about 4-5 minutes. Drain on paper towels.
- Serve: Enjoy hot with your favorite dipping sauce.
