For the Mousse
- 12½ ounces (3/4 pound) fresh strawberries
- ½ cup granulated sugar
- 1 cup cold heavy cream (whipping cream with at least 30% fat content)
- Extra fresh strawberries for topping

- Prepare Strawberries: Clean and slice the strawberries thoroughly to ensure freshness and remove any stems.
- Puree Strawberries: In a blender or food processor, combine the sliced strawberries with the granulated sugar and puree until smooth. Remove ½ cup of this puree and set it aside for layering later.
- Whip Cream: In a cold mixing bowl, beat the heavy cream using a hand mixer or stand mixer until stiff peaks form. This will give the mousse its airy texture.
- Combine Puree and Cream: Gently fold the remaining strawberry puree (not the ½ cup reserved) into the whipped cream, being careful not to deflate the mixture to maintain its lightness.
- Assemble Mousse: Divide the reserved ½ cup of strawberry puree evenly among 4 small to medium glasses (approximately 1 cup size each). Top each with the strawberry mousse mixture.
- Chill: Refrigerate the assembled mousse for at least 1 hour to allow it to set and the flavors to meld. This can also be left overnight if preferred.
- Serve: Before serving, garnish each glass with fresh sliced strawberries for an attractive and fresh finish. Enjoy immediately.
Notes
- To use this mousse as a filling for pies or cakes, whip the cream until thickened and fold in the strawberry puree.
- For better stability in fillings, dissolve 1 tablespoon gelatin in 2 tablespoons milk by heating gently without boiling, then temper it with a small amount (1-2 tablespoons) of the whipped cream mixture before folding into the rest.
