Instructions

  1. Prepare Strawberries: Clean and slice the strawberries thoroughly to ensure freshness and remove any stems.
  2. Puree Strawberries: In a blender or food processor, combine the sliced strawberries with the granulated sugar and puree until smooth. Remove ½ cup of this puree and set it aside for layering later.
  3. Whip Cream: In a cold mixing bowl, beat the heavy cream using a hand mixer or stand mixer until stiff peaks form. This will give the mousse its airy texture.
  4. Combine Puree and Cream: Gently fold the remaining strawberry puree (not the ½ cup reserved) into the whipped cream, being careful not to deflate the mixture to maintain its lightness.
  5. Assemble Mousse: Divide the reserved ½ cup of strawberry puree evenly among 4 small to medium glasses (approximately 1 cup size each). Top each with the strawberry mousse mixture.
  6. Chill: Refrigerate the assembled mousse for at least 1 hour to allow it to set and the flavors to meld. This can also be left overnight if preferred.
