  • 1/2 cup mandarin oranges
  • 16 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup powdered sugar
  • 1 cup bright pink candy melts
  • Spring themed sprinkles
  • Assorted cookies, graham crackers, or fruit for dipping

Instructions

  1. Prepare the Fruit: Drain the pineapple chunks, maraschino cherries, and mandarin oranges. In a bowl, combine the pineapple and cherries, then mash them into smaller pieces using the back of a fork. Drain the mashed fruit again to remove excess liquid.
  2. Create the Cream Base: In a separate bowl, mix the softened cream cheese, sour cream, and powdered sugar. Use a mixer on medium speed to beat the ingredients until smooth and well combined.
  3. Incorporate the Fruit: Add the mashed pineapple and cherries to the cream base. Beat again until well blended. Then, add the mandarin oranges and mix thoroughly. Refrigerate this mixture while preparing the candy melts.
  4. Melt the Candy: Place the bright pink candy melts in a microwave-safe bowl. Microwave in 10-20 second intervals, stirring between each interval, until the candy is completely melted. Allow it to cool for a minute or two.
  5. Combine and Chill: Remove the dip from the refrigerator and stir in the melted candy until well blended. Refrigerate the mixture for about 30 minutes to set.
  6. Garnish and Serve: Top the chilled dip with spring-themed sprinkles. Serve with assorted cookies, graham crackers, or fruit for dipping.
