Description

Delightful Easter-themed Rice Krispie treats shaped like eggs, coated in chocolate, and decorated with colorful candy melts. A perfect festive treat for spring celebrations.

Ingredients

Units Scale
  • 1 1/2 tbsp butter
  • 2 cups mini marshmallows
  • 3 cups Rice Krispies cereal
  • 10 oz milk or dark chocolate chips
  • Candy melts in pastel colors

Instructions

  1. Prepare the baking sheet: Cover a baking sheet with wax paper and set aside.
  2. Melt the butter: In a saucepan, melt 1 1/2 tbsp butter over low heat. This creates the base for your marshmallow mixture.
  3. Add marshmallows: Add 2 cups of mini marshmallows to the melted butter, stirring frequently until completely melted and smooth. This forms the sticky binding agent for your treats.
  4. Mix in Rice Krispies: Remove the marshmallow mixture from heat and stir in 3 cups of Rice Krispies cereal. Ensure all cereal is evenly coated with the marshmallow mixture.
  5. Shape the eggs: Use an Easter egg mold to form egg shapes, flattening the side facing up. This creates the distinctive egg shape for your treats.
  6. Melt chocolate: Melt 10 oz of milk or dark chocolate chips in the microwave, stirring frequently to ensure smooth consistency.
  7. Dip eggs in chocolate: Carefully dip each Rice Krispie egg into the melted chocolate and place on the prepared wax paper.
  8. Decorate: Melt candy melts, one color at a time, and drizzle over the chocolate-covered eggs using piping bags or squeeze bottles. This adds a festive, colorful touch to your treats.
  9. Refrigerate: Place the decorated eggs in the refrigerator until the chocolate hardens, approximately 30 minutes.

Notes

  • Be careful not to overcook the marshmallow and butter mixture, as this can result in overly hard treats.
  • If you don’t have an egg mold, you can use a deviled egg holder sprayed with nonstick cooking spray or even plastic Easter eggs.
  • An egg-shaped cookie cutter can also be used, though the treats won’t be rounded on top.
  • For best results, allow the treats to come to room temperature before serving for optimal texture.
