  • 1 shallot, chopped
  • 2 cloves garlic, pressed
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 3/4 teaspoon black pepper
  • 2 tablespoons sherry (or white wine, apple cider vinegar)
  • 3/4 teaspoon dried thyme
  • 1/2 cup heavy whipping cream
  • 3 oz Gruyère cheese, shredded (about 3/4 cup), divided
  • 2 (1.9-oz.) packs frozen mini phyllo pastry shells
  • 2 tablespoons minced fresh chives

Instructions

  1. Prepare Mushroom Filling: Preheat oven to 350°F. Pulse mushrooms and shallot in a food processor until minced.
  2. Cook Filling: Heat olive oil in a skillet over medium-high heat. Add mushroom mixture, garlic, salt, and pepper. Cook for 5 minutes. Add thyme and sherry; cook for 30 seconds. Stir in cream, bring to a boil, and cook for 2 minutes. Remove from heat and stir in ½ cup Gruyère cheese.
  3. Assemble Cups: Place phyllo cups on a baking sheet lined with parchment paper. Fill each cup with a spoonful of mushroom filling. Top with remaining cheese.
  4. Bake: Bake for 5-7 minutes, or until cheese is melted and bubbly.
  5. Garnish and Serve: Garnish with chives and serve hot or warm.

Notes

  • Use any type of fresh mushroom you prefer, such as cremini, button, or shiitake.
  • If you don’t have sherry, substitute with an equal amount of dry white wine or apple cider vinegar.
