Instructions

  2. Set up breading station: In one shallow plate, mix flour with 1 tsp salt and pepper. In another, combine breadcrumbs with 1 tsp salt and pepper. In a third plate, whisk eggs with 1 tsp salt, pepper, and Dijon mustard.
  3. Bread the chicken: Coat chicken in flour, then egg mixture, and finally breadcrumbs. Place on a rack set over a baking sheet.
  4. Fry the schnitzel: Heat ½-inch vegetable oil in a skillet over medium-high heat to 350°F. Fry each schnitzel for 2-3 minutes per side until golden brown. Drain on a wire rack.
  5. Serve: Garnish with parsley and serve with lemon wedges and Dijon mustard.
