Garlic Bread Baguette
- 4 small rolls (mini sub, baguette, sourdough, or pane di casa)
- 80 g (2 3/4 oz) unsalted butter, at room temperature
- 1/2 tsp freshly minced garlic
- 1 tbsp finely chopped flat-leaf (Italian) parsley
- 1/2 tsp salt
- 1/2 cup (50 g) freshly grated parmesan (or shaved if you prefer)
Caesar Filling
- 1 cup (250 g) whole-egg mayonnaise
- 1/2 tsp freshly minced garlic
- 2 anchovy fillets, finely chopped (optional)
- 1 tbsp freshly squeezed lemon juice
- 1 tsp dijon mustard
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp freshly cracked black pepper
- 1 whole cos (romaine) lettuce or 2 baby cos lettuces, shredded
- 4 Freezer-Friendly Chicken Schnitzels, cooked (see note)
- 1/2 cup (50 g) freshly grated parmesan, to serve
Instructions
- Preheat Oven Grill: Preheat your oven grill (broiler) to high so it’s ready to toast the bread.
- Prepare Rolls: Cut each dinner roll in half lengthways. Arrange the cut sides facing up on a baking tray.
- Make Garlic Butter: In a bowl, mix together the unsalted butter, minced garlic, chopped parsley, and salt until well combined.
- Butter and Cheese Rolls: Spread the garlic butter evenly over both cut sides of the rolls. Sprinkle parmesan generously over the buttered sides.
- Toast Rolls: Place in the oven under the grill (broiler) for 2–3 minutes, or until the bread is crispy and golden brown. Watch closely to avoid burning.
- Prepare Caesar Filling: While the bread toasts, combine the mayonnaise, minced garlic, anchovies (if using), lemon juice, dijon mustard, Worcestershire sauce, salt, and pepper in a large bowl. Whisk until smooth and fully combined.
- Toss Lettuce: Add shredded cos lettuce to the Caesar dressing. Toss thoroughly with tongs until the lettuce is generously coated.
- Assemble Sandwiches: Place crispy chicken schnitzels on the bottom half of each toasted roll. Top with a generous portion of the Caesar salad mixture and a sprinkle of parmesan cheese.
- Serve: Place the top halves of the rolls on and serve immediately while the bread is warm and crispy.
Notes
- For best results, use freshly cooked chicken schnitzels. Store-bought or homemade can both be used.
- You can omit anchovies if preferred for a milder dressing.
- Italian parsley adds a fresh flavor, but other herbs like chives can be substituted.
- Serve sandwiches immediately to preserve crispiness of the bread.
- Chicken schnitzels can be reheated in the oven for extra crunch.
