Instructions

  1. Preheat Oven: Set your oven to 400° F (204° C) to prepare for roasting the potatoes.
  2. Roast Potatoes: Place the potatoes in a casserole dish with a lid, then pour over the apple cider and chicken broth or dry white wine. Cover the dish and roast for 45 minutes, until the potatoes are very soft and cooked through.
  3. Prepare for Crispy Smash: Increase the oven temperature to 425° F (218° C). Remove the potatoes from the casserole and place them on a baking sheet. Using the back of a fork or a potato masher, gently smash each potato to flatten slightly.
