Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to ensure it’s hot enough for roasting.

- Arrange Chickpeas: Transfer the peeled chickpeas onto a 12-inch cast iron skillet or a suitable baking sheet, ensuring they are in one even layer without overcrowding to promote crisping.
- Toss with Oil: Drizzle the chickpeas with avocado oil and toss well with two spoons until evenly coated. Spread them out uniformly.
- Roast: Place in the oven and roast for 35 minutes, shaking the skillet or tossing halfway through to ensure even roasting and crispiness.
- Prepare Spice Mix: While roasting, whisk together maple sugar, smoked paprika, garlic powder, chili powder, onion powder, and salt in a small bowl.
- Season Chickpeas: Remove the skillet from the oven once roasting is complete. Sprinkle the spice mix over the chickpeas immediately and toss well to evenly coat all pieces.
