  • 30 grams butter (2 tablespoons)
  • 1/2 onion, finely chopped
  • 3 garlic cloves, finely diced
  • 1/2 teaspoon black pepper
  • 70 grams tomato paste (1/4 cup)
  • 3/4 cup cream
  • 40 grams parmesan, finely grated
  • 1 tablespoon lemon juice
  • Salt to taste

For Serving:

  • 200 grams dried pasta or 300 grams fresh pasta

Instructions

  1. Cook the Pasta: Boil heavily salted water for the pasta and cook according to package instructions. Reserve some pasta water before draining.
  2. Sauté Onions: Heat olive oil and butter in a pan. Add onions, cook until soft.
  3. Add Flavor: Add garlic, pepper, then tomato paste. Cook briefly.
  4. Make the Sauce: Pour in the cream, lemon juice, and parmesan. Stir until creamy.
  5. Combine: Add cooked pasta into the sauce, simmer to thicken.
  6. Season and Serve: Taste for seasoning, adjust salt, and serve hot with extra parmesan and black pepper.

Notes

  • For the onion, a yellow or white onion works best.
  • If pasta is cooked before the sauce, reserve about ¼ cup of pasta water to add to the sauce.
