Main Ingredients:
- 1 tablespoon olive oil
- 30 grams butter (2 tablespoons)
- 1/2 onion, finely chopped
- 3 garlic cloves, finely diced
- 1/2 teaspoon black pepper
- 70 grams tomato paste (1/4 cup)
- 3/4 cup cream
- 40 grams parmesan, finely grated
- 1 tablespoon lemon juice
- Salt to taste
For Serving:
- 200 grams dried pasta or 300 grams fresh pasta
Instructions
- Cook the Pasta: Boil heavily salted water for the pasta and cook according to package instructions. Reserve some pasta water before draining.
- Sauté Onions: Heat olive oil and butter in a pan. Add onions, cook until soft.
- Add Flavor: Add garlic, pepper, then tomato paste. Cook briefly.
- Make the Sauce: Pour in the cream, lemon juice, and parmesan. Stir until creamy.
- Combine: Add cooked pasta into the sauce, simmer to thicken.
- Season and Serve: Taste for seasoning, adjust salt, and serve hot with extra parmesan and black pepper.
Notes
- For the onion, a yellow or white onion works best.
- If pasta is cooked before the sauce, reserve about ¼ cup of pasta water to add to the sauce.
