Description

This Shrimp Orzo recipe is a delightful one-pan meal that is ready in just 30 minutes. Succulent shrimp, flavorful orzo, and a creamy sauce come together to create a satisfying dish perfect for any night of the week.


Ingredients

Shrimp:

  • 1 lb raw shrimp, large, peeled, and deveined – 16 or 20 count per 1 pound of shrimp
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon Italian seasoning (thyme, basil, oregano, rosemary)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 5 cloves garlic, minced
  • 2 tablespoons olive oil

Orzo and Sauce Ingredients:

  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup orzo, uncooked
  • 2 cups chicken stock
  • 1/4 teaspoon salt
  • 14 oz artichoke hearts, drained and chopped (1 can or about 1 cup)
  • 4 oz fresh spinach
  • 1 cup heavy cream
  • Salt and pepper, to taste

Instructions

  1. How to Sear the Shrimp: Season the shrimp with smoked paprika, Italian seasoning, salt, and pepper. Cook shrimp in olive oil with minced garlic for about 2 minutes per side. Remove shrimp to a plate.
  2. How to Cook Orzo: In the same skillet, cook sun-dried tomatoes, orzo, and olive oil until browned. Add chicken stock and salt, simmer until orzo is cooked. Add spinach, artichokes, and cream. Stir until spinach wilts.
  3. Add seared shrimp to the skillet with the cream sauce. Simmer until warmed through. Season with salt, pepper, and more smoked paprika, if desired.
