Ingredients

Units Scale

Seasoning

  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon pepper
  • 1 pinch cayenne (optional)

Pasta

  • 5 slices bacon
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 2 Tablespoons tomato paste
  • 1 cup heavy cream
  • 1 pint cherry tomatoes
  • 1 pinch red pepper flakes
  • 2 Tablespoons cream cheese, at room temperature
  • 1/2 cup Parmesan cheese, grated
  • 8 oz spaghetti
  • Fresh parsley to garnish

Instructions

  1. Cook the bacon: Cook the bacon slowly over low heat until crispy on each side. Remove and set aside on a paper towel lined plate. Reserve 1 tablespoon bacon drippings.
  2. Sear garlic: Add reserved bacon drippings to the pan along with the garlic over medium heat. Deglaze the pan with chicken broth.
  3. Prepare sauce: Add tomato paste, seasonings, and heavy cream. Simmer, then add cherry tomatoes and cream cheese. Adjust seasoning.
  4. Cook pasta: Boil salted water and cook pasta until almost done. Finish pasta in sauce with Parmesan cheese.
  5. Combine: Toss pasta in sauce until well coated. Let it cook briefly to thicken. Serve garnished with bacon and parsley.

Notes

  • Be cautious with salt as bacon and Parmesan are salty.
  • Adjust spice levels to suit your preference.
  • For a lighter version, use half-and-half instead of heavy cream.
