Instructions
- Cook the Cranberries: In a small saucepan over medium-high heat, combine cranberries, sugar, and 1/2 cup cold water. Bring to a simmer and cook, stirring occasionally, until the cranberries burst and the liquid reduces to a thickened, saucy consistency, about 12 to 14 minutes.
- Add Brandy and Evaporate Liquid: Stir in the brandy and continue cooking for about 2 more minutes, until most of the liquid evaporates. Remove from heat and transfer the cranberry mixture to a medium heatproof container or bowl. Allow to cool completely.
- Prepare the Cream Cheese Mixture: Meanwhile, in a large bowl, use a handheld mixer on low speed or a stand mixer with the paddle attachment to beat together cream cheese, heavy cream, lemon zest, and salt. Increase speed to high and continue mixing until the mixture is smooth and fluffy, approximately 1 minute.
- Assemble the Spread: Spoon the cream cheese mixture into a serving bowl. Dollop the cooled cranberry sauce over the top evenly. Sprinkle with sliced almonds or crushed walnuts and scallions. If desired, season with freshly ground black pepper.
- Finish and Serve: Drizzle extra-virgin olive oil over the spread. Serve immediately alongside assorted crackers or bagel chips for dipping.
