Description
This vibrant Cranberry Relish is a fresh, tangy, and sweet condiment perfect for holidays or any meal that could use a burst of fruity zest. Made with cranberries, tart green apples, and a whole seedless orange including the peel, this relish combines a lovely balance of tartness and sweetness. The fruit is finely ground to create a textured relish that is easy to prepare with a grinder or food processor, requiring no cooking. It’s ideal for serving alongside poultry, pork, or cheese plates.
Ingredients
Scale
Fruits
- 2 cups rinsed raw cranberries
- 2 peeled and cored tart green apples, cut into thick slices
- 1 large, whole (peel ON) seedless orange, cut into sections
Sweetener
- 1 to 2 cups granulated sugar (adjust based on desired sweetness)
Instructions
- Prepare the grinder or food processor: Set up your old fashioned grinder with a medium-sized grinder plate secured on the edge of a table with a large bowl underneath to catch the fruit. If using a KitchenAid grinder attachment, secure it properly. If using a food processor, ensure not to over-pulse to avoid turning the fruit into mush.
- Grind the fruit: Push the cranberries, orange sections (including peel), and apple slices alternately through the grinder to mix flavors evenly. If using a food processor, pulse the fruits carefully to maintain the relish texture.
- Add sugar and combine: Stir in the granulated sugar starting with less than a cup, then gradually add more in quarter cup increments until you reach the desired sweetness level. Mix thoroughly.
- Dissolve sugar and chill: Let the mixture sit at room temperature for about 45 minutes to allow the sugar to dissolve fully and flavors to meld. Then refrigerate the relish until ready to serve.
Notes
- Be careful not to over-process the fruit in a food processor to maintain texture.
- Adjust sugar quantity based on your preferred sweetness level.
- You must include the orange peel for the best flavor and texture.
- If you don’t have a grinder or food processor, finely chopping by hand is possible but labor-intensive.
- Relish can be stored in the refrigerator for up to one week.
