Description

These Cottage Cheese Brownies are a healthier twist on a classic dessert. They’re rich, fudgy, and packed with protein thanks to the cottage cheese, while still satisfying your chocolate cravings. Made with cacao powder, almond flour, and sweetened with maple syrup, they’re a guilt-free treat.


Ingredients

  • 1 cup cottage cheese (2% used)
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 cup cacao powder
  • 1/2 cup almond flour
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons mini chocolate chips, divided

Instructions

  1. Prepare Oven and Pan: Preheat oven to 350°F (175°C). Line an 8×8 inch square baking dish with parchment paper.
  2. Blend Ingredients: In a high-speed blender, add cottage cheese, eggs, maple syrup, coconut oil, cacao powder, almond flour, vanilla extract, baking powder, and salt. Blend until smooth, pausing to scrape the sides once.
  3. Bake: Pour batter into prepared baking dish, level with a spatula, and sprinkle with mini chocolate chips. Bake for 35 minutes or until a toothpick inserted in the center comes out almost clean, with small pieces of dough attached (a bit of wet batter is fine).
  4. Cool: Remove from the oven and let brownies cool for 10 minutes. Using the parchment paper flaps, transfer to a cooling rack and let cool completely before slicing. Cut into 9 squares.

Notes

  • Store: Store in a ventilated container for 2 days in a cool dark place. Then refrigerate for up to 3 more days.
  • Freeze: Freeze in an airtight container for up to 3 months.
