Apple Mixture:

  • 1/2 cup light brown sugar packed
  • 11/2 teaspoons ground cinnamon
  • 1 large apple peeled, cored, and chopped into small pieces

Topping:

  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon

Glaze:

  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat the oven: Preheat the oven to 350 degrees Fahrenheit. Grease and flour an 8.5 x 4.5 inch loaf pan.
  2. Mix dry ingredients: In a medium mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream butter and sugar: Using a mixer, beat the butter, sugar, and vanilla until smooth and pale.
  4. Add eggs and flour: Beat in the eggs, then mix in the flour and milk alternately.
  5. Prepare apple mixture: Combine brown sugar, cinnamon, and apples in a bowl.
  6. Layer batter and apples: Pour half of the batter in the pan, add half of the apple mixture, swirl, then repeat with the rest of the batter and apples.
  7. Add topping: Sprinkle cinnamon sugar mixture on top.
  8. Bake: Bake for 45-55 minutes until a toothpick comes out clean.
