For The Yogurt Bars:
- 3/4 cup dairy-free or Greek-style yogurt
- 1/4 cup coconut cream (omit if using Greek yogurt)
- 1/2 cup strawberries, diced small
- 1/2 teaspoon vanilla extract
- 1/2 tablespoon maple syrup
For The Chocolate:
- 1 cup dark chocolate chips
- 2 tablespoons coconut oil
Instructions
- In a medium-sized bowl, combine all ingredients for the yogurt bars except for the strawberries. Ensure the yogurt is well mixed. Before adding the yogurt, drain any excess water from the container.
- Gently fold in the diced strawberries, ensuring they are dry. Pat them with a paper towel if needed.
- Prepare a loaf pan by lining it with parchment paper. Ensure the parchment paper extends over the sides for easy removal later.
- Spread the yogurt mixture into the pan and freeze for 3 hours until set.
- Remove the frozen yogurt from the pan using the parchment paper handles. Cut into squares.
- Melt the chocolate and coconut oil together in a microwave-safe bowl. Dip each yogurt square in the chocolate, coating it completely.
- Place the bars on a lined tray and freeze to set the chocolate.
- Allow the bars to soften slightly before serving. Store any leftovers in the freezer.
