- 5 Russet Potatoes
- Olive oil, for rubbing

- 4 cups cooked, shredded chicken
- 4 oz PHILADELPHIA Cream Cheese, room temperature
- 1/4 cup butter, room temperature
- 1 (1 oz) package Ranch seasoning mix
- 1 1/2 tsp Frank’s Hot Sauce, plus more for drizzling if desired
- 2 cups grated cheddar cheese
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for baking the potatoes.
- Prepare Potatoes: Wash and dry the russet potatoes thoroughly. Rub each potato with olive oil and season liberally with salt and pepper. Prick the potatoes several times with a fork to allow steam to escape.
- Bake Potatoes: Wrap each seasoned potato individually in foil and place them on a baking sheet. Bake for about 1 hour, or until the potatoes are soft and cooked through when pierced with a fork.
- Make Filling: While the potatoes are baking, combine the cooked shredded chicken with room temperature cream cheese, butter, ranch seasoning mix, and Frank’s Hot Sauce in a mixing bowl. Stir until the mixture is evenly blended.
- Stuff Potatoes: Once the potatoes are done, carefully unwrap them and cut a slit down the center of each. Scoop out some of the potato flesh if needed to make room then stuff each with 3/4 cup to 1 cup of the chicken mixture.
- Add Cheese and Melt: Top the stuffed potatoes generously with grated cheddar cheese. Place them back in the oven (unwrapped) just until the cheese melts, about 3-4 minutes.
- Serve: Remove from oven and drizzle additional Frank’s Hot Sauce over the top if desired. Serve warm for a delightful meal.
