  • 1 cup low sodium chicken broth
  • 2 cups milk
  • 2 cups broccoli florets (1 head of broccoli), cut into small pieces
  • 1/4 teaspoon nutmeg
  • 2 cups shredded cheddar cheese

Instructions

  1. Prepare the chicken
    Heat the olive oil in a large skillet. Add the chicken breasts to the skillet and season them with salt and pepper. Cook for about 5 minutes until the chicken is cooked through and starts to lightly brown.
  2. Sauté aromatics
    Add the onions and garlic to the skillet with the chicken. Cook for another 2 minutes until the onions soften slightly, enhancing the flavor base of the dish.
  3. Cook the pasta
    Add the pasta, chicken broth, and milk to the skillet. Bring the mixture to a boil. Reduce the heat to low, stir, cover the pot/skillet, and simmer for 15 minutes. Stir occasionally to ensure the pasta cooks evenly and doesn’t stick to the bottom.
  4. Add broccoli
