Ingredients

  • 1/3 cup diced onions
  • 3/4 cup shredded matchstick carrots (cut extra long ones in half)
  • 3/4 cup diced celery
  • 4 tablespoons butter, divided
  • 3 cups chicken broth
  • 4 cups peeled and diced potatoes (golden or russet)
  • 1/4 cup all-purpose flour
  • 2 cups Velveeta cheese, cubed
  • 1 1/2 cups milk (2% or higher for creamier soup)
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Brown Beef and Sauté Vegetables: Brown the ground beef in a saucepan, drain, and set aside. In the same saucepan, melt 1 tablespoon of butter and sauté onions, carrots, and celery until tender.
  2. Simmer with Potatoes: Add the chicken broth, potatoes, and browned beef to a large pot and bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes, or until potatoes are tender.
  3. Make a Roux: In a separate skillet, melt the remaining 3 tablespoons of butter and whisk in the flour. Cook and stir for 3-5 minutes, or until bubbly. Add this roux to the soup and bring to a boil. Cook and stir for 2 minutes, then reduce heat to low.
  4. Add Cheese and Milk: Stir in the Velveeta cheese, milk, salt, and pepper. Cook and stir until the cheese is melted and the soup is smooth and creamy.

Notes

  • Use lean ground beef to reduce the fat content of the soup.
  • For a thicker soup, mash some of the potatoes before adding the cheese.
  • Feel free to add other vegetables, such as diced tomatoes or mushrooms.
  • To make this soup in a slow cooker, brown the beef and sauté the vegetables first, then combine all ingredients in the slow cooker and cook on low for 6-8 hours.
