Ingredients:

  • 2 lbs red potatoes
  • 2 tablespoons olive oil
  • 4 links chicken sausage (12 ounces), cut into 1/2-inch wide rounds
  • 1 medium onion, diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 2 cloves garlic, minced
  • Salt & pepper
  • Cajun seasoning

Instructions

  1. Boil Potatoes: Boil the red potatoes in a large pot of water for 15 minutes. Run under cold water or place in the refrigerator to chill. Dice the potatoes after they are chilled.
  2. Cook Potatoes and Sausage: In a large skillet over medium heat, add olive oil. Add the potatoes and cook until lightly browned on the edges, approximately 15 minutes. Add the sausage, onion, red pepper, and green pepper. Cook until the sausages are browned and the vegetables are tender. Add the minced garlic and cook for an additional 90 seconds.
  3. Season and Serve: Season the dish to taste with salt, pepper, and Cajun seasoning. Serve hot and enjoy!
