Description

Delightful and elegant Brie Phyllo Cups filled with a luscious blend of blackberry jam, honey, and melted brie cheese, topped with fresh blackberries and fragrant thyme. These bite-sized appetizers are perfect for parties and gatherings, offering a perfect balance of sweet, creamy, and tangy flavors baked into crispy mini phyllo shells.

Ingredients

Scale

Phyllo Cups

  • 15 mini phyllo shells (such as Athens brand)

Filling

  • 2 tablespoons blackberry jam
  • 2 tablespoons honey
  • 3 ounces brie cheese, rind removed and cut into 1/2” cubes

Topping and Garnish

  • 15 fresh blackberries, rinsed and dried
  • 2-3 sprigs fresh thyme leaves for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the phyllo cups.
  2. Prepare Phyllo Cups: Arrange the mini phyllo shells on a baking sheet evenly spaced out.
  3. Add Fillings: Place a small dab (about 1/2 teaspoon) of blackberry jam and 1/2 teaspoon honey inside each phyllo shell. Then top each with a 1/2-inch cube of brie cheese, ensuring the rind has been removed for a smooth melt.
  4. Bake: Bake the assembled cups in the preheated oven for 6-8 minutes, just until the brie has melted and the phyllo shells are very lightly browned and crisp.
  5. Add Fresh Toppings: Remove the baking sheet from the oven and immediately top each cup with a fresh blackberry and a few fresh thyme leaves.
  6. Optional Drizzle: Drizzle additional honey over the top if desired for extra sweetness and a glossy finish.
  7. Serve: Transfer the cups onto a wire rack to maintain their crispness and serve immediately while warm and melty.

Notes

  • Make Ahead: You can fill the phyllo shells with blackberry jam, honey, and brie up to 2-3 hours ahead and refrigerate. Bake just before serving for best results.
  • Choosing Brie: Use standard brie cheese with the rind removed. Freezing the brie briefly helps with cutting. Alternatively, use cream of brie for easier scooping.
  • Keep Shells Crisp: Immediately after baking, transfer phyllo cups to a wire rack to keep them crispy by allowing airflow underneath.
  • Variations: Add finely chopped walnuts or pecans for crunch. Substitute blackberries with other berries or swap honey with maple syrup. For a tart twist, reduce or omit honey. Try cranberry sauce instead of jam for a different flavor profile.
