- Preheat and Roast Tater Tots: Preheat your oven to 400°F. Place the frozen tater tots on a baking sheet or directly in your casserole dish and put them in the oven to start roasting as you prepare the other ingredients. This ensures they get crispy and golden by the time the casserole is assembled and baked fully.
- Cook Sausage and Vegetables: In a skillet over medium heat, cook the breakfast sausage along with the diced onion and green bell pepper until the sausage is browned and the vegetables are tender. Drain any excess grease from the skillet, then remove from heat and let the mixture cool slightly to prevent cooking the eggs prematurely in the next step.
- Mix Eggs and Seasonings: In a separate bowl, whisk together the eggs, milk (or half and half/heavy cream), all-purpose seasoning blend, black pepper, and optional Cajun seasoning until well combined. This mixture will create a custard that binds all the ingredients together in the casserole.
- Assemble the Casserole: Lightly grease your baking dish. Add the sausage and veggie mixture to the dish, along with half of the cooked bacon, the egg mixture, and 2 cups of shredded cheese. Stir everything together evenly to distribute flavors.
- Layer Cheese and Tater Tots: Sprinkle 1½ cups of shredded cheese evenly over the mixture in the dish. Then, arrange the partially roasted tater tots on top in a single layer.
