  • Tomatoes, sliced
  • Avocado, sliced

Instructions

  1. Cook Bacon: In a large skillet, cook bacon until crispy, then remove from pan onto a paper towel.
  2. Cook Potatoes: Add potatoes to the skillet and cook until browned.
  3. Add Vegetables: If using, add diced onions and bell peppers, and cook until tender, about 5 minutes.
  4. Incorporate Sausage: Stir in the chopped sausage and cooked bacon, heating through.
  5. Season: Add salt and pepper to taste.
  6. Add Eggs: Make wells in the pan and carefully break eggs into each well.
  7. Cook: Cover the pan and cook over medium-low heat until the egg whites are set, about 8-10 minutes.
