  • 1 cup blueberries
  • 1 cup sugar
  • 1 cup water

  • 3 tablespoons blueberry simple syrup
  • 810 mint leaves (plus a sprig for garnish)
  • 1/2 lime (plus slices for garnish)
  • 46 tablespoons lemon-lime sparkling water
  • Ice

Instructions

  1. Make the Blueberry Simple Syrup: In a small saucepan, combine blueberries, sugar, and water. Bring to a simmer over medium heat, stirring occasionally until the sugar is dissolved and the blueberries burst, about 5-7 minutes. Remove from heat, let cool, and strain through a fine mesh sieve. Discard solids and refrigerate the syrup until chilled.
  2. Muddle the Mint and Lime: In a sturdy glass, add the mint leaves and squeeze in the juice from 1/2 lime. Gently muddle with a muddler or the end of a wooden spoon to release the mint oils and lime juice, being careful not to tear the mint into pieces.
  3. Add the Blueberry Syrup: Pour 3 tablespoons of the chilled blueberry simple syrup into the glass with the mint and lime.
  4. Add Ice and Sparkling Water: Fill the glass with ice, then top with 4 – 6 tablespoons (or enough to fill) of lemon-lime sparkling water. Stir gently to mix.
  5. Garnish and Serve: Garnish the drink with a fresh sprig of mint and a few lime slices. Serve immediately and enjoy your blueberry mojito mocktail!
