  • 1/2 cup (100 g) granulated sugar
  • 4 1/25 cups (540 – 600 g) all-purpose flour
  • 2 1/4 teaspoons instant yeast
  • 1 1/2 teaspoons salt
  • 1/2 cup mashed banana

Filling and Assembly:

  • 4 Tablespoons (1/2 stick, 57 g) unsalted butter
  • 1/2 cup (107 g) packed light brown sugar
  • 1 tablespoon cinnamon
  • 2 large bananas, thinly sliced
  • 1/4 cup (60 ml) heavy cream

Cream Cheese Frosting:

  • 4 ounces cream cheese, softened
  • 4 tablespoons (57 g) unsalted butter, softened
  • 1 1/2 cups (170 g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Warm milk: Heat milk, butter, and sugar in a saucepan until 120°F-130℉. Remove from heat.
  2. Make dough: Combine flour, yeast, salt, butter mixture, and mashed bananas until a dough forms.
  3. Knead the dough: Knead until smooth and elastic, about 6-8 minutes.
  4. Let the dough rise: Allow to double in size, about 1-1 1/2 hours.
  5. Roll out the dough: Roll into a 18×12-inch rectangle.
  6. Spread filling: Spread butter, brown sugar, cinnamon, and banana slices over the dough.
  7. Cut rolls: Roll dough into 12 equal rolls.
  8. Let rolls rise: Place in a baking dish and let rise for 45 minutes.
  9. Bake rolls: Bake at 350°F for 30-35 minutes.
  10. Make the cream cheese icing: Beat cream cheese, butter, sugar, and vanilla until smooth.
  11. Ice rolls: Spread icing over warm rolls.
