Description

  • 8 (1.8 kg) bone-in chicken thighs, with skin on
  • 1/2 cup (120 ml) olive oil
  • 4 teaspoons (24 g) kosher salt
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon (1 g) paprika, smoked or sweet
  • 1 teaspoon (2 g) garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon (1 g) black pepper
  • 1 tablespoon (1 g) chopped parsley
  • 8 lemon wedges

Instructions

  1. Preheat the Oven: Adjust the oven rack to the middle position and heat to 425ºF (218ºC). Line a rimmed baking sheet with foil, place a wire rack on top, and grease with olive oil or cooking spray to prevent sticking.
  2. Prepare the Pieces: Trim off any excess skin and fat from the edges of the chicken. Thoroughly dry each piece with a paper towel to remove moisture from the surface, ensuring crispy skin when baked.
  3. Season the Pieces: In a large bowl, combine olive oil, salt, Italian seasoning, paprika, garlic powder, onion powder, and black pepper. Add the chicken to the seasoning mix and turn to coat evenly, ensuring each piece is well-seasoned.
  4. Bake the Chicken: Evenly space the seasoned chicken pieces on the prepared baking sheet. Bake until the skin is golden brown and crispy, about 35 to 40 minutes. The internal temperature should reach about 175ºF (79ºC) on a meat thermometer to ensure it’s fully cooked.
  5. To Serve: Allow the chicken to rest for 5 minutes before serving. This helps the juices redistribute throughout the meat. Garnish with chopped parsley and lemon wedges, then transfer to a serving platter.

Notes

  • For crispier skin, broil the chicken for 1-2 minutes at the end of baking. Check every minute to prevent burning.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • To reheat, cover and microwave on high in 15 to 30-second increments until hot.
  • If you don’t have a wire rack, bake directly on the baking sheet, but check a few minutes earlier for doneness.
