Description

These Baked Apple Cider Donuts are a delicious and easy fall treat. Made with real apple cider and warm spices, they’re soft, cakey, and perfect for a cozy afternoon snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon apple pie spice

  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1 large egg, at room temperature
  • 1/2 cup packed light or dark brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup milk, at room temperature
  • 1 teaspoon pure vanilla extract

Topping:

  • 1 cup granulated sugar
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon apple pie spice
  • 6 tablespoons unsalted butter, melted

Instructions

  1. Reduce Cider: Simmer apple cider in a saucepan over low heat until reduced to ½ cup. Set aside to cool.
  2. Preheat and Prep: Preheat oven to 350°F (177°C). Grease a donut pan with nonstick spray.
  3. Combine Dry Ingredients: In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, apple pie spice, and salt.
  4. Combine Wet Ingredients: In a separate bowl, whisk together melted butter, egg, brown sugar, granulated sugar, milk, and vanilla extract.
  5. Make Batter: Pour wet ingredients into dry ingredients. Add reduced apple cider and whisk until smooth.
  6. Fill Donut Pan: Spoon batter into donut cavities, filling each about halfway.
  7. Bake: Bake for 10-11 minutes, or until golden brown. Let cool for 2 minutes before transferring to a wire rack.
  8. Coat Donuts: Combine granulated sugar, cinnamon, and apple pie spice in a bowl. Dip each donut in melted butter, then coat in the cinnamon-sugar mixture.

Notes

  • Make Ahead: Freeze donuts for up to 2 months. Thaw overnight in the refrigerator and warm up before serving.
  • Apple Pie Spice: If you don’t have apple pie spice, you can make your own with cinnamon, cardamom, and nutmeg.
  • Milk: Use any type of milk (dairy or non-dairy). For a denser crumb, use yogurt or sour cream.
  • No Donut Pan? Make donut muffins in a standard muffin pan. Fill each cup ¾ full and bake for 18-20 minutes.
  • Mini Donuts: Make mini donuts in a mini muffin pan. Fill each cup ¾ full and bake for 8-9 minutes.
