Description

Apple Samoas are a quick and healthy snack featuring crisp apple slices topped with a delicious blend of shredded coconut, almond butter, and maple syrup, finished with a drizzle of chocolate. This no-cook recipe combines fresh fruit with sweet and nutty flavors, perfect for a satisfying treat or dessert.

Ingredients

Scale

Ingredients

  • 1 apple, Honeycrisp or Pink Lady preferred
  • ⅓ cup unsweetened shredded coconut
  • 3 tablespoons almond butter (or cashew butter or seed butter of choice)
  • ½ tablespoon maple syrup
  • 2 tablespoons chocolate chips
  • ½ teaspoon coconut oil

Instructions

  1. Prepare the Apple Slices: Cut the apple into ¼-inch thick slices and core each slice. You should get about 3 to 4 slices from one apple.
  2. Mix the Topping: In a bowl, thoroughly combine the shredded coconut, almond butter, and maple syrup until the mixture is uniform and sticky enough to spread.
  3. Assemble the Samoas: Spread the coconut and nut butter mixture evenly on top of each apple slice. Lay the topped slices on parchment paper for easy clean-up.
  4. Melt Chocolate: Gently melt the chocolate chips together with coconut oil until smooth. This can be done in a microwave in short bursts or on a stovetop double boiler.
  5. Drizzle and Chill: Drizzle the melted chocolate over the assembled apple slices. Place the tray into the freezer for about 5 to 10 minutes until the chocolate firms up.
  6. Enjoy: Once set, enjoy your apple samoas immediately or store as desired.

Notes

  • Storage: Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. Note that the apples may lose some crunch but will remain delicious.
  • Freezing: To freeze, place assembled apple slices on a baking sheet and freeze until solid, then transfer to a freezer-safe bag. They can be stored for up to 1 month. Allow to thaw for a few minutes before eating.
