Description

A festive and colorful Antipasto Wreath featuring skewered mozzarella, basil, olives, cherry tomatoes, artichoke hearts, and a variety of cured meats, arranged beautifully on a platter for an impressive appetizer presentation perfect for parties and gatherings.

Ingredients

Scale

Cheeses

  • 8 oz mozzarella balls

Vegetables and Herbs

  • 14 oz artichoke hearts
  • 1 pint cherry tomatoes
  • Basil leaves (as needed for skewers)
  • Rosemary sprigs (for garnish)
  • 8 oz pepperoncini (8-16 oz jar)

Olives

  • 8 oz green olives (Pitted Italian Castelvetrano olives – 1 jar)
  • 8 oz pitted Kalamata olives (1 jar)

Meats

  • 6 oz spicy Genoa salami
  • 6 oz prosciutto salami

Instructions

  1. Prepare Ingredients: Gather all the ingredients including mozzarella balls, basil leaves, cherry tomatoes, artichoke hearts, olives (Castelvetrano and Kalamata), pepperoncini, and the two types of cured meats: spicy Genoa salami and prosciutto salami.
  2. Assemble Skewers: Using 4-inch skewers, thread one mozzarella pearl, followed by a basil leaf, an olive (either green or Kalamata), a piece of your choice of vegetable (such as cherry tomato, artichoke heart, or pepperoncini), and finish with a slice of either Genoa or prosciutto salami onto each skewer. Mix and match for variety.
  3. Arrange Wreath: Place a large circular serving platter or cutting board on your prep surface. Arrange the assembled skewers in a circular wreath shape, layering them closely to form a full and appealing presentation.
  4. Garnish: Tuck fresh rosemary sprigs in and around the wreath to add a touch of greenery and aromatic fragrance, enhancing the festive appearance of the appetizer.
  5. Serve: Present immediately to guests or refrigerate briefly if preparing in advance, allowing the variety of flavors to meld together.

Notes

  • You can substitute or add other antipasto ingredients on the skewers such as stuffed olives, tortellini, stuffed peppers, marinated mushrooms, or pickled vegetables.
  • Consider adding cubed parmesan or other cheese varieties on some skewers for more cheese diversity.
  • Other cured meats like pancetta, Coppa, soppressata, or pepperoni may be used to customize the skewers to your liking.
  • Nutrition will vary depending on which ingredients you choose and their quantities on each skewer.
  • Skewers can be pre-assembled a few hours ahead and refrigerated until ready to serve.
