Description

This Air Fryer Butternut Squash recipe is a healthy, easy, and delicious side dish featuring tender, caramelized butternut squash seasoned with warm spices and a touch of sweetness. Quick to prepare and perfectly roasted in the air fryer, it’s an ideal choice for busy weeknights or holiday meals.

Ingredients

Scale

Produce

  • 1 large butternut squash (about 2 lbs), peeled, chopped, and cubed

Seasonings

  • 1 tsp. cinnamon
  • 1/4 tsp. garlic powder
  • 1/2 tsp. salt
  • Oils and Sweeteners
  • 1 Tbsp. olive oil
  • 1 Tbsp. brown sugar or sugar replacement

Instructions

  1. Preheat the Air Fryer: Set your air fryer to 350°F (175°C) and allow it to preheat fully for best results.
  2. Prepare the Butternut Squash: Using a potato peeler, peel the butternut squash. Carefully cut it lengthwise to expose the seeds. Scoop out and discard the seeds.
  3. Chop and Season: Cut the peeled squash into bite-size cubes and place them in a large bowl. Drizzle with olive oil, then sprinkle with cinnamon, garlic powder, and salt. Toss everything together to evenly coat the squash chunks.
  4. Air Fry the Squash: Transfer the seasoned squash cubes into the air fryer basket, arranging them in a single layer for even cooking. Cook for 20 minutes, stirring or shaking the basket halfway through, until the squash is fork-tender and slightly golden brown on the edges.
  5. Add Sweetness and Finish: Remove the basket from the air fryer and sprinkle the cooked squash with brown sugar (or sugar replacement). Toss to coat, then return the basket to the air fryer and cook at 350°F for an additional 3 minutes to caramelize the sugar.
  6. Serve: Once cooking is complete, remove the butternut squash from the air fryer. Serve warm as a delightful side dish.

Notes

  • Cut the squash into even-sized cubes for the most consistent cooking.
  • Adjust the seasoning to your taste preference by adding more or less cinnamon or garlic powder.
  • For a savory version, omit the brown sugar and increase the spices or add black pepper.
  • This recipe works with other winter squash varieties as well.
  • If using a smaller air fryer, cook in batches to avoid overcrowding.
