Potatoes
- 4 large potatoes, preferably Yukon Gold or Russet
Herb Butter
- 1/4 cup vegan butter (melted)
- 1/2 tsp thyme, dried
- 1/2 tsp oregano, dried
- 2 cloves garlic, minced
- 1/2 tsp sea salt
- 1/2 tsp pepper
Garnish
- 1 tbsp fresh parsley, chopped
Instructions
- Prepare the Potatoes – Preheat your oven to 425°F (220°C). Peel the potatoes if desired, then place each potato between two chopsticks or wooden spoons. Slice down vertically every 1/8 to 1/4 inch, being careful not to cut all the way through, so the slices stay connected at the bottom. Flip and repeat on the other side to achieve the accordion effect.
- Prepare the Herb Butter – In a small saucepan or microwave-safe bowl, melt the vegan butter. Stir in dried thyme, oregano, minced garlic, sea salt, and pepper until thoroughly combined. This creates a fragrant, savory butter mixture.
- Coat the Potatoes – Use a pastry brush to coat each potato thoroughly with the herb butter, making sure to get into the accordion folds. Place the potatoes on a lined baking sheet.
- Roast the Potatoes – Roast the potatoes in the preheated oven for 45-55 minutes, or until golden brown, crispy on the edges, and tender on the inside. Halfway through cooking, you can optionally baste with additional herb butter.
- Garnish and Serve – Remove potatoes from the oven, sprinkle with freshly chopped parsley, and serve hot as a stunning appetizer or side dish.
Notes
- For a richer flavor, you can add smoked paprika or chili flakes to the butter mixture.
- Be sure to slice carefully so as not to cut all the way through the potatoes.
- Russet potatoes yield crispier edges, while Yukon Gold offer a creamier texture.
- Serve with your favorite dipping sauce for added flavor.
- Leftovers can be reheated in the oven or air fryer to restore crispiness.
