Instructions

  1. Prepare the Potatoes – Preheat your oven to 425°F (220°C). Peel the potatoes if desired, then place each potato between two chopsticks or wooden spoons. Slice down vertically every 1/8 to 1/4 inch, being careful not to cut all the way through, so the slices stay connected at the bottom. Flip and repeat on the other side to achieve the accordion effect.
  2. Prepare the Herb Butter – In a small saucepan or microwave-safe bowl, melt the vegan butter. Stir in dried thyme, oregano, minced garlic, sea salt, and pepper until thoroughly combined. This creates a fragrant, savory butter mixture.
  3. Coat the Potatoes – Use a pastry brush to coat each potato thoroughly with the herb butter, making sure to get into the accordion folds. Place the potatoes on a lined baking sheet.
  4. Roast the Potatoes – Roast the potatoes in the preheated oven for 45-55 minutes, or until golden brown, crispy on the edges, and tender on the inside. Halfway through cooking, you can optionally baste with additional herb butter.
  5. Garnish and Serve – Remove potatoes from the oven, sprinkle with freshly chopped parsley, and serve hot as a stunning appetizer or side dish.
