Main Ingredients
- 1/2 cup salted butter
- 1 small green cabbage, roughly chopped
- 1 large white onion, halved and sliced
- 8 ounces diced pancetta (or diced bacon)
- 1 pound egg noodles (or gnocchi)
Seasonings and Add-ins
- 1/4 teaspoon black pepper
- 5 ounces plain goat cheese, crumbled
Instructions
- Prepare the Cabbage and Onion:
In a large saucepan, melt the 1/2 cup of salted butter over low heat. Once melted, increase the heat to medium-high, and add the chopped cabbage and sliced onion. Cook for about 10 minutes, stirring often, until the cabbage softens and begins to lightly brown. - Cook the Pancetta/Bacon:
Stir in the 8 ounces of diced pancetta (or bacon) to the cabbage and onion. Cook for an additional 7 minutes, stirring frequently, until the pancetta is crispy and the vegetables are tender. Then, remove the mixture from heat. - Cook the Noodles or Gnocchi:
While the pancetta and vegetables are cooking, bring a large pot of salted water to a boil. Add the 1 pound of egg noodles (or gnocchi) and cook according to the package instructions. Once done, drain the cooked noodles thoroughly. - Combine Everything:
Add the drained noodles (or gnocchi) to the cabbage and pancetta mixture. Sprinkle with 1/4 teaspoon of black pepper and gently stir everything together until well combined. - Add Goat Cheese:
Finally, spread the crumbled goat cheese over the mixture. Stir gently until the cheese melts and evenly coats the dish. Serve hot and enjoy!
Notes
- Can’t find pancetta? Diced bacon works perfectly as a substitute.
- For a more traditional European-style Haluski, use gnocchi in place of egg noodles.
- To save time, prep the cabbage and onion while the butter is melting and the water is boiling.
